This sounds delicious, and it's great that you've found a way round the grainy spinach. Frozen spinach here is invariably slimy, and I never get through an entire bag of fresh spinach in time, so I am still in search of a good way to use spinach for things. Perhaps I should try another type of frozen spinach.
